There's a satisfying weight and purpose to a blade built for one job done exceptionally well. The Kogarashi Nakiri Knife moves through vegetables with clean, straight strokes, its titanium-plated, stone-washed finish giving each piece a distinct, weathered character.

The burnt white oak and red G10 handle adds a bold contrast that feels as good in hand as it looks on the block.

Forged from a custom 67-layer Damascus steel and hardened to 60±2 HRC, the blade holds a fine 15°±1 edge for precise, flat-profile cutting.

It arrived so sharp I had to slow myself down for the first few days, which is a very good problem to have. Since then it has done everything I have thrown at it, delicate work and heavy work alike, without ever feeling out of its depth. The edge has held beautifully with only occasional honing, and the handle is still as comfortable on day ninety as it was on day one. If you are hesitating, do not.
