The 8.5" blade is built from 67 layers of Damascus steel wrapped around a hard, high-carbon stainless core, tempered to 60±2 HRC and honed to 15° per side for clean, controlled cuts. An octagonal olive wood and black buffalo horn handle keeps your grip secure through long sessions. As a true all-purpose chef's knife, it handles meat, fish, and vegetables with ease, though it's not meant for bones or frozen food.
